Zesty Sausage and Bean Soup
This soup gets a double dose of Zesty from our Zesty Onion EVOO and using Hot Italian Sausage. It does have a little bit of a kick but you can dial it back a bit by using Mild Italian Sausage.
The combination of the warming spices, sausage, beans, tomato, cream and cheese makes this soup hearty and so comforting. This is great for a cold winter day and will warm you from the inside out!
- 2 tablespoons Zesty Onion Extra Virgin Olive Oil
- 1lb ground Hot Italian Sausage
- 1 onion, diced
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon dried thyme
- 1/4 teaspoon fennel seeds
- 1 teaspoon Greek Oregano
- 3 tbsp Beef Better than Bouillon
- 3oz tomato paste
- 3 cups water
- 1/2 cup tomato sauce
- 2 15oz cans cannellini beans
- 1 15oz can chickpeas
- 3/4 cup heavy cream
- 3/4 cup grated parmesan
In a pot, add Zesty Onion Extra Virgin Olive Oil and heat up for 1 minute. Add onion and saute for a few minutes, then add italian sausage. Cook sausage until fully cooked - use a couple paper towels to remove as much grease as possible from pot before adding remaining ingredients.
Add salt, ground black pepper, dried thyme, fennel seeds, oregano and Beef Better than Bouillon and stir until completely incorporated into sausage and onions. Cook for 3 to 5 minutes, then stir in tomato paste. Add water and tomato sauce. Bring mixture to a low boil and add beans.
Cook on a low simmer for 15 minutes, then add in cream and parmesan cheese. Bring back to a light simmer to ensure cheese is melted, then remove from heat.
Serve with a crusty bread.
