If you haven't tried a bean salad, you should definitely try this one!

This bean salad is so bright and refreshing due to the combination of the Meyer Lemon EVOO, Champagne Vinegar and fresh herbs.  Great as a side dish but also can have tuna, salmon or chicken added to make it a main dish!

Zesty White Bean Salad
  • 2 15oz cans cannelini beans, drained and rinsed
  • 1/3 cup Meyer Lemon EVOO
  • 1/3 cup Champagne Vinegar
  • 1/2 cup chopped fresh herbs - parsley, cilantro and dill
  • 2 tablespoons chopped fresh chives
  • 2 shallots, finely diced
  • 1 tsp Chili Crisp Crunch
  • 1 tsp kosher salt

In a small bowl, whisk Meyer Lemon EVOO, Champagne vinegar, chili crisp crunch and kosher salt together.  Set aside.

In a medium bowl, add cannelini beans, fresh herbs and chives and shallots together and stir gently.  Pour the oil & vinegar mixture over the beans and stir until beans are evenly coated.

Refrigerate until ready to use.


This is another salad that I would encourage you to make in advance!  This salad is definitely best on Day 2 or after.
