These mashed potatoes are luxurious in flavor and texture!
Using Terrapin Ridge Farms Truffle Aioli adds a great truffle flavor to these mashed potatoes to make them taste like a million bucks! Don't count your calories with this one but sometimes you just need a splurge.
- 5lbs gold potatoes (peeled if you prefer)
- 1/2 cup butter, softened
- 1 8oz block cream cheese, softened
- 3/4 cup Terrapin Ridge Farms Truffle Aioli
- 3-4 teaspoons salt
- 1 teaspoon ground black pepper
- 1 teaspoon lemon juice
- 1 cup heavy cream
Cut potatoes into large chunks and place in a pot of water. Salt the water and then bring to a boil of high heat. Cook the potatoes until they are fork tender and drain well.
Place the potatoes in the bowl of a stand mixer and the whisk attachment. Turn the mixer on medium and mix until potatoes are mostly smooth. Add in the butter, cream cheese, truffle aioli, salt, black pepper and lemon juice - beat until creamy. Add the heavy cream 1 tablespoon at a time until desired texture is achieved.
Can make ahead and reheat in the oven or on the stove when ready to serve!
