This creamy rice pudding has an extra dose of creamy with this luscious Tres Leches sauce. In Spanish, "Tres Leches" translates to "three milks" and if you've never tried a tres leches cake, I highly recommend you find yourself one!

The combination of the golden raisins, orange and cardamom gives this pudding a beautifully subtle flavor that is a really nice way to end a meal.  We prefer to serve it cold because it let's the flavors come together a bit more, but it is also delicious right off the stove!

Tres Leches Cardamom Rice Pudding

Rice Pudding: In a small saucepan, combine uncooked rice, water and cardamom pods.  Bring to a boil, then cover and turn heat to low - cook for 15 minutes.  Fluff and place in the refrigerator to cool down for at least 1 hour.

In a medium sauce pan, combine rice, whole milk, heavy cream, coconut milk, ground cardamom and salt.  Cook over medium heat until mixture starts to boil - at this point, add the golden raisins and let boil, stirring constantly for 5 minutes.  Remove from heat - at this point, you can serve immediately or let cool down in the refrigerator to serve later.

Tres Leches Sauce: In a small bowl, combine sweetened condensed milk, evaporated milk and heavy cream.  Whisk together until the three milks are well combined.  Add the Orange Mango Passionfruit Balsamic Vinegar and whisk together - the mixture may thicken slightly and that's ok!  Lastly, stir in the orange zest.  Refrigerate until ready to use.

When serving, we like to place a spoonful of the rice pudding in a bowl, then add a few generous spoonfuls of the Tres Leches Sauce.
