Taste of the Tropics Pancakes
Pancakes are such a fun blank canvas to use for different flavor varieties! After a recent trip to someplace warmer than Pennsylvania in the winter, we really wanted some tropics in our pancakes.
Pancake dry mix is easy to make at home but when I'm short on time, I will absolutely use a baking mix to save on time and then add what I want to dress it up! These tropical pancakes have shredded coconut, chopped macadamia nuts and Dizzy Pig Pineapple Head Seasoning.
- 2 cups biscuit baking mix
- 3 tablespoons sugar
- 2 teaspoons baking powder
- 1 tablespoon Dizzy Pig Pineapple Head Seasoning
- 2 tablespoons Vanilla Extra Virgin Olive Oil
- 1 cup milk
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup shredded coconut (sweetened or unsweetened, based on preference)
- 1/2 cup chopped macadamia nuts
Combine baking mix, sugar, baking powder and pineapple head seasoning in a bowl. Add milk, eggs, Vanilla EVOO and vanilla extract - whisk together until combined. Lumps are ok! Stir in coconut and macadamia nuts.
Heat a griddle or griddle pan over medium heat and pour pancake mix into individual pancakes - use a scoop that will give you the size pancakes you're looking for! We typically use a ¼ cup measuring cup for a pancake that is 4-5 inches across.
Top with whatever toppings you're feeling! Maple syrup, more coconut or macadamia nuts, freshly sliced bananas, an extra sprinkle of Pineapple Head Seasoning or even our Pineapple White Balsamic vinegar!
This recipe is a great jumping off point for all kinds of flavors - simply switch out the Pineapple Head seasoning, macadamia nuts and coconut for whatever flavor combination you want!
