What do you do when you are craving a smoked salmon bagel with cream cheese, red onions & capers but you have pasta and not a bagel? Make a smoked salmon pasta!
This smoked salmon pasta recipe is quick, easy, and perfect for a weeknight meal or to serve to guests. The flavor is incredible, and it's so easy to make that you can throw it together on a busy weeknight when you don't have much time to cook.
- 1/2lb fresh/frozen/dried pasta of choice
- 1 8oz block cream cheese, cut into 5 or 6 pieces
- 1/2 cup heavy cream
- 1 1/2 tbsp Garden Veggie Mix
- 1 4oz package smoked lox, thinly sliced
- 1/4 red onion, thinly sliced
- 1/4 cup capers
- fresh dill for garnish
In a medium pot, bring water to a boil and cook pasta according to package directions.
While pasta is cooking, combine the heavy cream, cream cheese and garden veggie mix in a small saucepan and heat over medium low heat. Using a whisk, incorporate the cream cheese into the heavy cream to make a smooth sauce as it heats. When the pasta is done cooking but before you drain it, add a ladle of pasta water into the sauce and whisk in.
Drain pasta and return to pan. Pour sauce over top and gently mix in smoked salmon, red onion & capers. Add into 3 bowls and garnish with fresh dill.
