We love our Queso Seasoning and it adds so much flavor to this Queso White Chili!

With just 10 ingredients, and most of them pantry staples, this chili can come together in 30 minutes, making it an easy and satisfying week night dinner.   

Some of the best chilis take hours to develop amazing flavor and it's totally worth it (check out our Three Bean Chuck Roast Chili recipe!) but using this Queso seasoning takes the time element away and is just as amazing.

Queso White Chili
30 minutes total (25 minutes cook • 5 minutes prep)
Ingredients
  • 2 tablespoons Jalapeno Extra Virgin Olive Oil
  • 1lb ground pork
  • 1 sweet onion, chopped
  • 1 teaspoon salt
  • 2 tablespoons Queso Seasoning Mix
  • 1 8oz package cream cheese, softened
  • 1 can Rotel Original tomatoes, undrained
  • 2 cans cannellinni beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese (optional)
Instructions

In a large pot, start with olive oil and cook onion for 5 minutes.  Add salt and pork - cook pork until cooked through.  Feel free to drain the pork at this time if you prefer but keeping at least some of it helps to enhance the flavors!

Add queso seasoning mix to pork and onion mixture, stirring until it is well incorporated.  Add the cream cheese and let it melt for about 1 minute, then stir until it completely melts and coats the pork.  Add in tomatoes, beans and chicken broth.

Cook for about 20 minutes for all the flavors to come together.   If you are adding in the shredded cheese, add it in and stir until completely melted - let cook for 5 minutes.

Serve with sour cream, shredded cheese, chopped onions or any other favorite chili toppings!

Notes

The 1 cup of shredded cheddar cheese at the end is optional - you can add into the chili right before serving or just put it on as a topping. We've made it both ways (because I've forgotten the cheese on accident once) and I didn't even notice until I checked the recipe the next day!  

I almost never make including cheese optional (because it's cheese ya'll!), but in this case it truly is delicious with or without it included.

Also, this can be a crockpot dinner - Simply cook up the pork and onion first and then add those with all the other ingredients (except the shredded cheese) to the crockpot - cook on low for 4 hours and add in the cheese if desired at the end right before serving.
