Harissa Carrot & Raisin Salad
I've always loved a carrot raisin salad so thought it would be a fun base to play with flavors! Using the Harissa EVOO in here gives it just a bit of a kick with a good tang from the Honey Ginger White Balsamic
If you've ever had a carrot raisin salad where they've been skimpy with the raisins, I can promise you that is not this salad. I've doubled down on the raisins and we are using both regular and golden! This is also a great salad to make ahead to let all the flavors meld together and it helps rehydrate the raisins as well.
- 1 12oz bag shredded carrots
- 1 cup brown raisins
- 1 cup golden raisins
- 1/2 cup finely chopped pistachios
- 3 tbsp Harissa Extra Virgin Olive Oil
- 4 tbsp Honey Ginger White Balsamic
- 1 tsp salt
- 1 tsp dried parsley
Mix carrots, raisins and pistachios together in a medium bowl, set aside.
In a small bowl, whisk Harissa EVOO, Honey Ginger White Balsamic, salt and parsley together. Pour over the carrot mixture and gently mix until all is covered. Let sit in the fridge for at least 4 hours but preferably overnight before serving.
