This quick and easy pasta dinner is a favorite at our house - the creaminess of the mozzarella helps offset spice from the sausage and chili oil!
Who doesn't love quick and easy dinners? We love our olive oils and balsamics because they can add so much flavor without adding so much complexity. The depth of the garlic and chili flavor in this olive oil is absolutely fantastic and is one of our go-tos in our home kitchen.
- 1 lb fresh/dry/frozen pasta
- 1 lb hot or sweet Italian Sausage (depending on how spicy you like it!)
- 1 cup roasted red peppers, drained and sliced
- about 1/4 cup Garlic Chili Olive Oil
- 8oz smoked or fresh mozzarella, cubed
In a large skillet, cook the hot or sweet Italian sausage until there is no pink. Drain grease and add in roasted red peppers. While the sausage is cooking, bring a pot of water to boil and add some olive oil and salt. Cook pasta according to directions. Drain pasta and return to pot.
Add sausage, roasted red peppers and mozzarella to the pasta. Drizzle with about 1/4 cup of Garlic Chili Olive Oil (more or less based on amount of sauciness you prefer). Toss gently together to coat.
Makes about 4 servings
Have fun with this recipe! Change up the peppers for onions or roasted asparagus, try meatballs or seasoned chicken instead of sausage, use feta instead of mozzarella! Try some of our other olive oils to change up the flavor profile - Italian Herb EVOO, Harissa EVOO, Artichoke & Garlic EVOO, or Parmesan Garlic Rosemary EVOO.
So many combinations to keep this recipe fresh and different, while still easy and consistent to make.
