This potato salad is creamy, crunchy and spicy!
Potato salads are a staple at any picnic but this one is well outside of your normal kind! We've taken all the things we love about a creamy, crunchy potato salad and added something else we love - Garlic Chili Crisp! Not only does the flavor and spice of this crisp take the salad up a notch, the crunch garlic pieces in this crisp are next level.
- 3 lbs thinly sliced potatoes
- 1/4 cup KariKari Garlic Chili Crisp
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 tablespoon salt
- 2 tablespoons apple cider vinegar
- 1/2 cup chopped celery
- 1/2 cup chopped green onions
- 1/2 cup crumbled bacon
Slice potatoes and place in a large pot of cold water and a large pinch of salt. Bring to a boil and cook until potatoes are fork tender. Drain and set aside to cool.
In a large bowl, mix garlic chili crisp, sour cream, mayonnaise, salt and apple cider vinegar - whisk together until fully mixed. Add potatoes, celery, green onions and bacon - stir together gently to coat everything evenly with the sauce. Refrigerate until ready to serve.
This salad is best made at least 1 day in advance - that gives more time for the potatoes to soak up all those great garlic chili flavors!
