Have you heard of the sandwich Elvis made famous? Peanut butter, banana and bacon. Certainly not a very popular combination, then or even still now!

But I tell you what, that man was on to something and you'll become a believer too when you try our twist on the classic Elvis sandwich.  We've kept the 3 classic components - peanut butter, banana & bacon and we've upped the game with Terrapin Ridge Farm Apple Maple Bacon Jam.  We've also turned it from a sandwich into a quesadilla, or a 4-way wrap.  You'll be going back for seconds with this one!

Elvis Quesadilla
30 minutes total (10 minutes cook • 20 minutes prep)

Place one tortilla on a cutting board.  On the bottom half of the tortilla, spread peanut butter - not too thick but enough to generally cover it.  On the other half of the tortilla, you're going to put half a banana's worth of slices on the top left quarter; on the other quarter you are going to spread the Terrapin Ridge Farms Apple Maple Bacon Jam and then sprinkle with a handful of crumbled bacon.

With a knife, you're going to cut through the center of the peanut butter covered side and stop at the center.  Take the quarter on the left side of the cut you just made and fold it up over the bananas; pick up that side and fold it over to the right over the bacon side, then fold the whole thing back down over the last peanut butter side.  This should leave you with a fairly even wedge shaped quesadilla!

Cook in a skillet with a little butter until you get a nice crisp on both sides - fair warning, this CAN make your pan a bit messy but I promise it's worth it :)

Repeat the preparation process with the remaining 7 tortillas or however many you want to make!
