Dizzy Tzatziki
I'm simply addicted to so many of the flavors and ingredients used in Greek food and an easy way to create that flavor is to use Dizzy Pig Mediterraneanish seasoning! It's highlighted here in our Dizzy Tzatziki.
Our twist on tzatziki might be slightly heavier on the seasoned side than a classic tzatziki but it's a winner in our book. Pairs beautifully with a roasted lamb leg also seasoned with the Dizzy Pig Mediterraneanish and our Rosemary Olive Oil!
- 1 whole cucumber
- 2 cups plain greek yogurt (whole milk is best but 2% will work too!)
- 1 teaspoon kosher salt, divided
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 2 tablespoons fresh dill, minced
- 2 1/2 teaspoons Dizzy Pig Mediterraneanish Seasoning
Cut the ends off the cucumber and grate with the large holes in a box grater. Place it in a colander and toss with 1/2 tsp kosher salt - let sit for 15 minutes. Squeeze to remove as much liquid as possible, you should end up with about 1 cup grated cucumber
In a separate bowl, mix yogurt, remaining salt, lemon juice, garlic, dill and 2 tsp Mediterraneanish until smooth. Add grated cucumber and mix thoroughly.
For best results, let sit for at least an hour to let the flavors develop. After letting it sit, add more lemon juice, Mediterraneanish seasoning, salt or dill based on your preference!
