If you are already making our Cranberry Sauce for a holiday gathering, add in these bars and you can kill two birds with one and a half stones!

These Cranberry Cookie Bars are a buttery orange shortbread cookie bar topped with our classic Cranberry Sauce, with more shortbread cookie crumbled on top.

Make cranberry sauce and refrigerate until ready to use.

Shortbread bars:

Preheat oven to 350F.  In a bowl, combine butter and sugars - using a stand or hand mixer, mix until creamy.  Add egg and Mandarin Orange White Balsamic - mix until both are fully incorporated.

In a small bowl, combine flour, baking powder, ground cloves and salt.  Add the dry ingredients into the butter mixture, mixing just until the mixture comes together.  Reserve about 2 cups of the mixture to crumble on top.

In a greased glass 8"x8" baking dish, press down remaining dough evenly across the bottom.  Bake for 10-15 minutes or until the edges are lightly golden brown.  Take about 2 cups of the cranberry sauce and spread evenly across the crust.  Use the reserved 2 cups of crust mixture to crumble across the top loosely.

Bake for 30-35 minutes or until top is golden brown and edges are bubbly.  Let cool fully before cutting into squares and serving.

Notes

If you want more orange flavor, replace the Cranberry Dark Balsamic in the cranberry sauce with more of the Mandarin Orange White Balsamic.
