What's not to love about snickerdoodles?? It's an amazing cookie on it's own and it's also so fun to play around with!

This take adds in our Cinnamon Pear Dark Balsamic into the dough to deepen the cinnamon flavor and adds pear jam in the center of each cookie for a little surprise!  Now, we've chosen here to bake the jam inside the cookie but that is a bit more time consuming.  This recipe also works perfectly turning the cookie into a jam thumbprint instead.

Cinnamon Pear Jam Cookies

In a bowl, mix butter and sugars with a stand or hand mixer.  Add in egg, Cinnamon Pear Dark Balsamic and vanilla extract - mix until all are incorporated.

In a small bowl, mix flour, baking soda, baking powder, cinnamon and salt.  Add into the butter mixture gradually until fully incorporated.  Place dough in fridge for about 30 minutes to chill.

Mix sugar mixture for rolling cookies in a small bowl and set aside.  Preheat oven to 375F.

For jam inside: Roll dough into balls  and flatten into discs.  Place a small amount of pear preserves in center of disc.  Fold edges of cookie over jam to create a half circle (like a pocket).  Crimp edges together and gently roll the pocket back into a ball.  It's ok if there are some gaps in your cookie ball!  Roll the ball in the sugar and place on a cookie sheet.  Repeat with remaining cookies.  Bake for 8-12 minutes or until brown.  Set on a wire rack to cool.

For jam thumbprints:  Roll dough into balls and roll in the sugar mixture.  Place on a cookie sheet and create a thumbprint in the cookie using your thumb, making sure to not go all the way through the cookie.  Fill thumbprint about ⅔ full with pear preserves.  Bake for 8-12 minutes or until brown.  Set on a wire rack to cool.

Notes

We're really partial to the Pear Preserves in these but you could also use a spiced apple or even a holiday jam (cranberry based) if you want to play around!
