We love guacamole. That's all I have to say about that.

If you haven't tried pistachios with your avocadoes, you need to!  This guacamole version includes our Spicy Mole Dark Balsamic as well as chopped pistachios.  When we take this guac to parties, we always come home with an empty bowl and recipe requests.

Chunky Guaca-Mole
10 minutes total (10 minutes prep)
  • 4 avocadoes, diced
  • 1/2 cup red onion, diced
  • 3 jalapenos, diced and seeded (based on heat preference)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup Spicy Mole Dark Balsamic Vinegar
  • 1 1/2 teaspoons salt
  • 1/2 cup chopped pistachios

Combine all ingredients in a bowl and stir gently to combine.  Serve with tacos or with tortilla chips, pita chips or veggies of choice.


The Spicy Mole Dark Balsamic will give the guacamole a dark tint right off the bat but the acidity of the vinegar will act like lime juice would and preserves it from continuing to brown quickly.
