Brownie Ice Cream Sandwiches
Ice cream sandwiches are a classic summer dessert. It seems like everyone has some sort of memory revolving around those chocolate cookie ice cream sandwiches and licking around the edges as it melted and left chocolate dust on your fingers!
Instead of trying to recreate those chocolate cookies, we are wrapping our ice cream with BROWNIES. The best part of this recipe is there is NO wrong way to make these when it comes to the brownie/ice cream combination. We've taken our Blood Orange Brownie recipe and used our Vanilla EVOO here for a classic pure chocolate brownie flavor but we've got some additional flavor combos down in the notes!
- Brownies:
- 1/4 cup butter
- 1/4 cup Vanilla EVOO
- 2oz unsweetened chocolate, chopped finely
- 1 cup sugar
- 1 whole egg + 1 egg yolk
- 1/2 cup all purpose flour
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 pint of ice cream flavor of choice!
Preheat oven to 350°F. Line 2 8"x8" square baking dishes with parchment paper that overhangs the edges (this is to remove the brownies in one piece later).
In a large saucepan over very low heat, melt butter and chocolate, stirring constantly. Stir in sugar and cook for a few minutes more until sugar is somewhat dissolved, stirring continuously. Take off the heat and let cool slightly.
Drizzle in Vanilla EVOO and whisk until well mixed. Add egg and egg yolk, one at a time, beating until well blended after each addition. Stir in flour, vanilla extract and salt until just blended. Pour into prepared baking pan.
Bake 10-15 minutes until toothpick inserted in center comes out clean. Let cool completely before next step.
To create the ice cream sandwiches, remove the ice cream from freezer and let soften for about 5 minutes. On one of the pans of brownies, spread the ice cream evenly from edge to edge. On the other pan of brownies, use parchment paper to lift the brownies from the pan and gently lay on top of the ice cream. Return to the freezer for at least 30 minutes for the sandwiches to freezer together.
When ready to serve, use the parchment paper on the bottom to remove the sandwiches from the pan. Remove the top piece of parchment paper and cut into desired squares. Wrap any remaining bars in aluminum foil or wax paper and return to freezer.
