Banana Chai Muffins with a Coconut Chai Glaze
These Banana Chai muffins will warm you up from the inside out on a cool fall day!
The warming notes of Chai spices, topped with a sweet coconut chai glaze, makes these muffins perfect for a fall morning.
- Muffins
- 1 1/2 cups mashed banana
- 1 cup light brown sugar
- 1/4 cup whole milk
- 1/4 cup butter, melted
- 1/4 cup Vanilla EVOO
- 1 egg
- 1 1/2 cups all purpose flour
- 1 1/2 tsp baking soda
- 1 1/2 tbsp chai spice blend
- 1 tsp salt
- Glaze
- 1/2 can cream of coconut
- 1/2 tsp chai spice blend
In a bowl, mlx bananas, sugar, milk, butter, Vanilla EVOO and egg together. In a separate bowl, mix flour, baking soda, chai spice and salt. Gently add the flour mixture to the banana mixture and stir until just combined. Grease or line a 12-cup muffin tin and fill cups 3/4 full with batter.
Bake at 350F for 18-22 minutes or until muffins are deep golden brown. Let cool.
To make the glaze, add half can of coconut cream and chai spice to the bowl of a stand mixer. Using the whisk attachment, whisk on medium high speed for 6 minutes. Remove the bowl from the stand. Turn each muffin upside down and dip the entire top into the glaze, then put right side up on a cooling rack with a mat set up underneath to catch the drips.
Store loosely covered at room temperature.
