Mushrooms are tricky - for many, the texture is enough to say "no, thanks". However, for those of us who don't mind the texture, a properly cooked and seasoned mushroom is a thing of beauty!

Let me introduce you to what is easily my favorite mushroom that I've ever cooked.  Roasting the mushrooms at a high heat helps the balsamic vinegar add just a bit of caramelization to these bad boys.  A little bit of heat from the garlic chili olive oil, the salt and herbiness of the parsley brings it all together for a tasty bite.

20 minutes total (10 minutes cook • 10 minutes prep)

Preheat oven to 400F.

In a small bowl, combine Garlic Chili Olive Oil, Caramelized Onion dark balsamic, salt, dried parsley and black pepper. Whisk until smooth and well combined. Add sliced mushrooms to the bowl and gently mix with a spoon or spatula until mushrooms are evenly coated with balsamic mixture.

Roast in oven for 10 minutes - mushrooms will shrink significantly in size. Use on burgers, omelets, sub sandwiches, as a simple side dish or anywhere else you use mushrooms.

Makes ~1 cup roasted mushrooms
