Apple Pecan Bread Pudding
Bread pudding is such a comforting dessert and this one is no exception.
We've upped the game on this one by adding an apple pecan filling, which adds a contrasting texture to the custardy bread pudding. By including our Pecan Praline Dark Balsamic in small parts in three places, it adds a depth of flavor all through it!
- Apple Pecan Filling
- 2 medium apples, peeled and chopped
- 1/2 cup chopped pecans
- 2 tablespoons butter
- 2 tablespoons lemon juice
- 1 tablespoon light brown sugar
- 1 tablespoon Pecan Praline Dark Balsamic Vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon ground Korintje Cinnamon
- 1 teaspoon vanilla extract
- Bread Pudding
- 6 cups bread cubes (about 2 demi-baguettes)
- 5 eggs
- 2 cups 2% milk
- 1/4 cup melted butter, slightly cooled
- 1/2 cup light brown sugar
- 1 tablespoon Pecan Praline Dark Balsamic
- 1/2 teaspoon ground Korintje Cinnamon
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- Pecan Praline Sauce
- 1 14oz can sweetened condensed milk
- 1 tablespoon butter
- 2 tablespoons half and half
- 1/2 tablespoon Pecan Praline Dark Balsamic
Apple Pecan filling:
Melt butter in a sauce pan, then add chopped pecans and sauté for 2 minutes. Add chopped apples and stir to mix evenly. Add sugar, lemon juice, salt and cinnamon – cook until sugar is melted and apples are fully coated. Add Pecan Praline Dark Balsamic and vanilla – cook for about 5-1o minutes, stirring occasionally, until apples are softened. Remove from heat and set aside until ready to use.
Bread Pudding:
Preheat oven to 325F. Put bread cubes in a large bowl and set aside. In another bowl, whisk eggs, milk, melted butter, sugar, Pecan Praline Dark Balsamic, cinnamon, salt and vanilla together. Pour the milk mixture over the bowl of bread cubes and let sit for about 20 minutes, stirring occasionally to move the bread around, until about 75% of the milk has been absorbed. Put about half of the bread pudding mixture into a 9x5 loaf pan, add all the apple pecan mixture evenly over that layer, then put the remaining bread pudding and liquid mixture over top. Try to cover the apple mixture as much as possible but it’s ok if some shows through. Bake for 35-50 minutes or until bread pudding is set.
Pecan Praline Sauce:
In a small saucepan, combine all ingredients and whisk until fully incorporated. Heat over low heat for 5-10 minutes or until mixture is fully heated. Serve warm with bread pudding.
