Acai Chocolate Balsamic Mousse
This dessert is both light in texture and heavy in flavor. So simple and easy to make, also very versatile!
The Acai Berry Dark Balsamic is an absolutely perfect pairing for this mousse - the Acai Berry can have a light chocolate flavor offset by sweet-tart berry, which makes this combo sing! Given that this dessert needs 6 hours to set, it's the perfect make ahead dessert.
- 6oz semi-sweet chocolate, chopped (54%-65%)
- 2 tablespoons Acai Berry Dark Balsamic Vinegar
- 1/4 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1 large egg
- 1/2 cup whole milk
- 1/2 cup heavy cream
In a blender or food processor, combine semi-sweet chocolate, Acai Berry Dark Balsamic Vinegar, egg, salt and vanilla. Process or blend on low speed for 15-20 seconds, or until chocolate is mostly broken down into finely chopped pieces.
In a small saucepan over medium-low heat, heat whole milk and heavy cream to a low simmer - turn off before it starts to boil. Remove the top of the pour spout in the food processor or blender; turn the processor on and stream the hot milk slowly through the pour spout. Let it continue to process for at least 1 minute - this will help ensure that the heavy cream whips and creates a light airy texture.
Pour into 4 6oz ceramic ramekins and place in the fridge to set, at least 6 hours.
